Pork Loin Roll with Carrot Puree and Onion Sauce

- Potatoes800 g
- Beef bouillon cube1 pc
- Pork Loin Rolls4 pcs
- Butter3 tbsp
- Milk1 dl
- Nutmeg1 pc
- Flat-leaf parsley1 pc
- Onions4 pcs
- All-purpose flour2 tbsp
- Water2 dl
- Carrots800 g
- Salt1 pc
- Black pepper1 pc
Cooking steps
- 1.Peel the carrots and potatoes and cut them into pieces. Cook for 20 min. in lightly salted water.
- 2.Meanwhile, cut the onions in half and then into crescent shapes. Melt 2/3 of the butter in a pan and sauté the onions for 8 min over low heat. Crumble the bouillon cube over them and sprinkle with flour. Let it cook for a bit longer, then pour in 1.5 dl of water. Let it reduce until it forms a thickened sauce.
- 3.Melt the remaining butter in a non-stick pan and fry the pork loin rolls until golden brown on all sides. Let them cook for another 12 min. over low heat.
- 4.Finely chop the flat-leaf parsley. Drain the carrots and potatoes and mash them into a puree. Add the milk and flat-leaf parsley and season with nutmeg, pepper, and salt.
- 5.Serve the pork loin rolls with the puree and spoon the sauce over them.
