Courgette with Creamy Bean Stew

- Jasmine rice300 g

- Black balsamic vinegar8 tbsp
Cooking steps
- 1.Bring water with a pinch of salt to a boil in a lidded pot for the rice and cook the rice for 10-12 minutes. Then drain and let it steam dry.
- 2.Halve the courgette lengthwise. Score a diamond pattern into each courgette half. Season with salt and pepper.
- 3.Heat ½ tbsp olive oil in a lidded pan over high heat and fry the courgette for 2-3 minutes on the scored side.
- 4.Add the indicated amount of water to the pan. Flip the courgette and cook, covered, for 7-8 minutes.
- 5.Press or finely chop the garlic. Drain the beans in a colander.
- 6.Prepare the broth.
- 7.Heat a splash of olive oil in a lidded sauté pan over medium-high heat. Fry the Sicilian herb mix, garlic, and bell pepper strips for 1 minute.
- 8.Add the passata, broth, beans, black balsamic vinegar, and sugar and bring to a boil. Let the stew gently thicken, covered, for 4-5 minutes. Season with salt and pepper.
- 9.Stir the sour cream and half of the Grana Padano into the stew. Bring briefly back to a boil.
- 10.Then remove the sauté pan from the heat and season the stew with salt and pepper.
- 11.Divide the rice among the plates and spoon the stew over the rice.
- 12.Place the courgette on top of the stew.
- 13.Garnish with the pesto and the remaining Grana Padano.
