Black and white puddings with vegetable mash and applesauce
Puddings with applesauce, it doesn't get more everyday than this! To still provide some extra veggies, Jeroen makes a vegetable mash with the vegetables he found in his fridge. So feel free to use whatever you have lying around at home for the mash!

- White sugar2 tbsp

Cooking steps
- 1.Peel the apples, remove the core and cut the apples into pieces. Let a knob of butter melt in a pan and sauté the apples in it. Add the sugar, a cinnamon stick and a splash of water and put a lid on the pan. Let the apples stew until soft and let the applesauce cool down.
- 2.Roughly chop the onions and garlic. Let a generous knob of butter melt in a large pot and sauté the onion and garlic in it.
- 3.Clean, wash and roughly chop the vegetables: celery, leek, carrots, celeriac and parsnip. Add the cut vegetables to the onion and garlic.
- 4.Finally, peel the potatoes, cut them into pieces and add them. Add a splash of water, a few sprigs of thyme, 2 bay leaves, nutmeg, celery salt and pepper and put a lid on the pot. Let the vegetables cook for at least 30 minutes, until tender and soft.
- 5.Let a knob of butter melt in a pan and fry the black and white puddings in the fat over a gentle heat.
- 6.Scoop a spoon of vegetable mash onto a plate, add the puddings and serve with a spoonful of applesauce and some mustard.
